My Favorite Carrot Cake

Carrot Cake Recipe from Rowena Larkin  of First Christian Church in  Lebanon Oregon where I attended during my teen years.

 Heat oven to 350o  Grease pans; will make 3 layers or one 9X13 sheet

 2 cups sugar                              dash of salt

 4 tsp cinnamon                         1½ cups oil   

2 tsp baking soda                      2 cups flour              

 3 cups grated carrots             4 eggs   

 Combine dry ingredients in mixer bowl. Add oil and mix well. Add eggs one at a time mixing well. Add grated carrots.

Bake for about 30 minutes. Let cool completely then frost.

 Cream Cheese Frosting

8 oz cream cheese                                1lb powdered sugar

1 cube butter or margarine                    1 tsp vanilla

Whip all ingredients together until fluffy. Then add 1 cup chopped walnuts (if desired)
